Super easy, sugar-free, sweet potato and protein muffins
After trying out a sweet potato muffin recipe I found on Instagram I decided to make my own. Why? Because the recipe I found had too many ingredients and didn’t have much protein. My recipe has only 5 ingredients and more protein!
When it comes to baking I have three main goals: make something with zero processed sugar, include adequate protein and use whole foods. This recipe checks off all three boxes! Obviously taste is also a factor, but I digress.
Ingredients:
2 cups of cooked sweet potato
1 cup of rolled oats
1 scoop of chocolate protein powder
1/2 cup of egg whites
1/2 a cup of frozen mixed berries or blueberries
Instructions:
Obviously you will require some precooked sweet potato to make this recipe quickly so you will want to make sure that you have some on-hand. To make this recipe, simply mix all of the ingredients in a mixing bowl and fill up a muffin pan (I used a silicone pan for easy removal). Bake at 350F for 30 minutes.
