Super easy, sugar-free, blueberry protein pancakes.

 

After trying out several pancake recipes I came up with this simple, yet satisfying one. My aim was to develop a recipe that checked several boxes. The recipe had to be low-Calorie, high in protein, contain zero refined sugar, be made with whole-food ingredients and be super easy to make!

Having a higher protein content means that these pancakes will not only help you maintain your hard-earned muscle mass but will keep you feeling fuller for longer (higher protein intakes are associated with feeling more satiated).

I have tried making these pancakes with all of the flours listed below and every batch was good! You can use whatever protein powder you have on hand but I recommend using Leanfit whey (no affiliation) protein powder which can be purchased at Costco (in Canada) as it is high quality, very affordable and has minimal fillers. I have tested this recipe with both the chocolate and vanilla flavoured Leanfit whey protein powders and they were both good so choose whatever flavour you prefer!

When cooking the pancakes I recommend using some coconut, avocado or grapeseed oil if you are going to use oil as they tolerate heat well. If you have a decent non-stick pan you should not require much oil at all (about half a teaspoon). I generally just put a little bit of oil in the pan for the first batch and find that I don't need to add more after that. Keep in mind, that reducing the amount of oil/butter used when cooking will reduce the amount of Calories consumed which is important if fat-loss is your goal.

Ingredients

A note on the flour: In order to make oat flour simply toss some rolled (or quick) oats in a blender or coffee grinder. Whole wheat flour will also likely work just fine if that is all you have.

  • 1 banana

  • 1 cup of water

  • 1/4 cup of egg whites (or two whole eggs if fat-loss is not your goal)

  • 1.5 tsp baking powder

  • 1.5 cups of oat, spelt or buckwheat flour

  • 1/3 of a cup of protein powder

Optional add-ins

  • 1/2 cup of frozen blueberries or

  • 1/2 cup of grated carrot

Instructions

Step 1: Mash the banana in a bowl then add the water, egg whites (if using whole eggs beat them before you add them), blueberries or shredded carrot.

Step 2: In a separate bowl mix up the baking powder, flour and protein powder.

Step 3: Combine the wet and dry ingredients.

Step 4: Put some batter in the pan (once you see bubbles on top of the pancake it’s time to flip it over).
