Banana, oat and seed cookies.
Looking for a quick and easy cookie recipe that contains no added sugar and requires only a handful of ingredients? You have come to the right place! I promise you, this recipe is so easy and quick to make you will be making it all the time!
As you scroll down you will notice that I have provided a few photos of variations I have made. The amount of variations you can make from this basic recipe is literally endless. It really comes down to what you have on-hand that you would like to add. For example, you could add nuts, seeds, dried fruit, shredded coconut, cocoa powder, protein powder and so on.
Bonus tip! If you want to save even more time, instead of putting the cookies onto a baking sheet simply scoop them into a silicone muffin pan if you have one. I found that this method is quicker because then I don’t have to spend time shaping each individual cookie while at the same time trying to keep it together. In fact, in all of the photos below I used a silicone muffin pan which is why the cookies are shaped so nicely.
Note: As you add more ingredients you may have to add more moisture by adding another banana which is generally the case if you add a scoop of protein powder. How many bananas you add really comes down to how moist or crunchy you prefer your cookies.
Ingredients
2-3 bananas (see Note above)
2 cups of rolled oats
1/2 cup of sunflower seeds
1 tsp of cinnamon
1/4 cup of protein powder which is equivalent to most protein scoops (optional)
Directions
Preheat oven to 350F.
Mash bananas in a large bowl (I just use a fork).
Pour in oats, sunflower seeds and cinnamon.
Mix everything together and place cookie-sized portions onto a baking pan covered with parchment paper (or use a silicone muffin pan).
Flatten each cookie down slightly, if using a muffin pan, pack the batter down firmly.
Bake for 20-25 minutes (check to see if they are baked to your desired level of firmness).
